Crunchy & Baked Tofu Nuggets

Ingredients

  • 2 slices of extra-firm organic silken tofu
  • 1/2 cup almond parmesan (recipe below)
  • 1 egg
    coconut oil cooking spray

Preheat oven to 350°F. Coat your wire racks with cooking spray and set aside.

Cut the tofu into nugget cubes (or desired shapes). Wrap the tofu in paper towels and allow to sit for 10-15 minutes, until moisture is absorbed. Unwrap and set aside.

In a small bowl, lightly scramble an egg. Dip the tofu nuggets in the egg mixture then dip into the almond parmesan, coating on all sides. Place the tofu on your prepared baking sheet.

Bake the nuggets for about 10 minutes, flip and bake for another 10-15 minutes, until golden brown and crispy. Allow to cool. Serve with your favorite dipping sauce.

Almond Parmesan

Ingredients

  • 1 cup raw almonds (either with skins or without)
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon garlic & pepper powder
Place all ingredients in food processor/blender and process until your desired consistency.
{Add more nutritional yeast, garlic & pepper powder to taste.}

Every time you feel hungry or feel the need to munch something, have the beets you saved earlier. No cooking required and cold beets taste good as well.
  • Beets fight cancer. Studies show beet juice inhibits the formation of cancer-causing compounds, particularly in the colon and stomach.
  • They prevent heart and vascular diseases. Beet greens and roots contain the phytochemical betacyanin, which reduces levels of the homocysteine, an amino acid related to heart and vascular diseases. Plus, compounds in beets dissolve inorganic calcium deposits that cause arteries to harden.
  • Beets guard against Alzheimer’s and dementia. Nitrates in beets open the blood vessels and increase blood flow to the brain, which can help prevent cognitive disorders in older adults.
  • Beets are good for your eyes. The lutein and zeaxanthin in beets support macular and retinal health.

  • Beets are good for your skin. Beets contain vitamin A, which maintains healthy skin and mucus membranes as well as protects against lung and mouth cancers.
  • You can have beets in the raw form as well as boiled, steamed or sautéed forms. You can also have the juice of fresh beets. However the juice of beet has a very strong taste and may not be like by all, but beet juice is an excellent health tonic. You can mix beet juice with carrot juice and apple juice to reduce the strong taste.
  • Beets are natural blood cleanser and colon cleanser.

Cucumber Tofu Boats

Ingredients for 2 boats

1 large cucumber Scrambled tofu

  • 2 slices extra firm tofu (crushed)
  • 1 tsp olive oil
  • 1 tsp ground turmeric
  • 1/4 tsp garlic pepper salt

Lemon sauce

  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • organic agave
Salad
  • 3 mini sweet peppers
  • 1 cup green salad
  • 1 tbsp dried cranberries
  • 1 tbsp sliced almond
Instructions:
First, fut the cucumber lengthwise, and remove the seeds
  1. Scrambled Tofu: In a medium skillet combine all ingredients over medium heat for about 7 minutes.
  2. Lemon sauce: combine all ingredients in a small bowl and beat everything well, the amount of organic agave is to taste you prefer, if you prefer more or less sweet.
  3. For the salad remove the seeds and finely chop the peppers. With a sharp knife cut the almonds finely and combine with green salad, lemon sauce, scrambled tofu and dried cranberries, then fills the cucumbers.
